Food Style

The most important ingredient in Thai Cuisine is of course the ingredients themselves, they must be at all times fresh and of the best of quality.

My suppliers are carefully chosen to ensure that I have only the very best of ingredients in my dishes. Cooking and wine are similar in as much that you cannot achieve a great end result by using mediocre ingredients and therefore as chef and artisan, my suppliers are critically important to me.

My food must achieve an unforgettable experience for the diner not just in taste and flavour but it must be visually inviting too. The dishes I create extend the boundaries by my being inspired by classic style Thai cuisine combining modern styles, fresh ideas and flavours. I am continually evolving my food with all these influences enhancing what I consider my special and individual style of Thai cuisine.

I always obtain the greatest joy by planning each dish style well before I enter the kitchen and hope that they will love my creations and indeed fall in love with them as I constantly do!

I consider that presentation is critically important and that my creation must look visually inviting with all manner of swirls and flavours infused on the plate. In the manner of an artist, I love to use beautiful and fresh leaves to create an inviting and delicious picture frame on a plate.
