The Chef -

Jimmy completed his apprenticeship under the guidance
of many chef’s in five star hotels in Thailand and the Middle
East. At the same time he became interested in studying more about food
presentation and creating a new style of cooking, mixing both the east
and western cuisines thereby creating a successful balance between the
two.
In 1996 he travel to Europe and took a short holiday working in Madrid
with an exclusive restaurant, specializing in modern Thai cuisine. The
owner gave him many ideas and opportunities as to how to create different
fine cuisine but unfortunately his holiday finished too soon before
he had to return to Thailand. Jimmy then went to work at a five star
hotel in Bangkok, however this time he was able to utilize his newly
found experience to become second chef at this special fine dining restaurant.
In 1999 Jimmy began looking for a new experience and decided to go to
Melbourne where he could study and gain further experience working with
various restaurants.
In 2000 he felt that he was now ready and confident to enable him to
open his own restaurant. Thus the “Thai Princess Restaurant at
16 Glenferrie Road, Malvern, Melbourne, Victoria , Australia was established
specializing in classic and modern Thai cuisine. The restaurant became
a great success culminating after four years with a listing in The Age
Good Food Guide 2007 – the bible to all that's best in the Australian
restaurant scene.
In 2006 Jimmy moved to a new home. His new restaurant is called the
“Little Thai Princess” at 285 Burke Road, Glen Iris Victoria,
Australia this is second venture but not his last!
